Pancake Day recipes four ways
January felt very, very long, and we're realising that the main reason for this was that there was very little to break it up. Tricky in a normal year, but in 2021 we really could have done with something (nice) to interrupt the monotony. February, by contrast, is jam-packed with thrilling distractions from all the snow, to the colourful wonder of a Chinese New Year celebration (check out our crafts, storytime and downloadables). And it doesn't stop there, there's the swirling love bomb of Valentine's Day watch our love song to bubbles now if you haven't already. And if all of this wasn't thrilling enough, there's Shrove Tuesday too. So, whether you need your pancakes vegan, gluten-free, traditional or packed full of 'hidden' veggies, check out our recipes below, and we wish you all a very happy flipping day!
Makes six medium pancakes.
200gr plain flour (or 50/50 plain white and wholemeal)
400ml Oat Milk
1 tsp baking powder
1 tsp sugar
1/2 tsp vanilla essence
Coconut oil for greasing the pan
Vegan toppings of choice!
Mix all the ingredients with half the oat milk until combined and all lumps have dissolved. Then mix in the remaining oat milk. Then make pancakes as normal!
